Creamy Lemon, Basil, Tomato Pasta with Chicken
1 large cooked chicken breast cut into bite size pieces
2 tablespoons butter
1 tablespoon oil
5 cloves of garlic
6 Roma tomatoes, skin peeled. Boil them for 30 seconds to a min to make it easy to peel
2 1/2 tablespoons lemon juice
8oz pasta (any kind)
1/4 cup heavy cream
3/4 cup parmesean cheese
1/2 cup chopped basil
Onion powder (measure with your heart)
Salt to taste
Heat your pot of water to a boil and cook noodles (try to line up the timing with the sauce. If you can’t, it’s not the end of the world)
Chop tomatoes in to sixths
Heat butter and oil in the pan on medium heat
Add garlic and cook until fragrant (about 3-5 min)
Add tomatoes and lemon juice. Cover with a lid and cook for 10 min (or until pasta is done). After about 6-7 min, add your chicken breast to heat up.
Drain the pasta and add to the pan. Let some of the juices boil off.
When the juices are boiled off to your liking, add heavy cream and cheese. Stir until cheese is melted.
Take off the heat and mix in basil.
