No Bake Peanut Butter Granola Bars

Prep time: 10 minutes

Refrigeration time: 1 hour

Total time: 1 hour 10 minutes

1 cup peanut butter

2/3 cup honey

Vanilla extract (measure with your heart)

Sprinkle of salt

2 ½ cups rolled or old fashioned oats

1/3 cup mini semi-sweet chocolate chips

Combine peanut butter, honey, vanilla, and salt until well incorporated.

Add oats and chocolate chips. Mix again until well incorporated, about 30 seconds on the stand mixer at level 2-3 speed.

Put mixture in a square baking dish lined with parchment paper.

Cover with a second piece of parchment paper and press down to form and shape mixture.

Place in refrigerator for approximately 1 hour before cutting into 8 granola bars.

For less chewy/sticky, place the bars in the freezer for a bit!
